This is a delicious and very nutritious recipe, a refreshing dessert with a consistency of gelatin but 100% veg.
1. Vegetable milk is needed. – You can do it by soaking almonds, or else, such as sesame and sunflower seeds.
In the first, soak the almonds for about 24 hours, changing the water a couple of times. Then put them 1-2 minutes in boiling water in order to peel them easily. In the second, soak sesame and sunflower seeds for about 8 hours.
Drain the soaking water, and put the peeled almonds or the sesame and sunflower in the blender with fresh water, everything has to be liquefied for at least 1 minute. Then strain to obtain the milk (the residue can be consumed as a dessert, or to enrich soups or stews).
(Avoid commercial vegetable milks, as they are quite expensive and they don´t have such a flavor and nutritional power of a homemade milk)
2. Pour the milk into glasses or deep plates, and add about 5 or 7 tablespoons of chia – that depends on the consistency you want to achieve, and some natural sweetener (honey, brown sugar). You can also add, it is up to you, vanilla extract, or ground cardamom or chocolate or coffee, to get different delicious flavors. Put it in the refrigerator, the chia will expand and it will become like jelly. Once curd or harden, you can put fruits or nuts on top, as in the photo. Enjoy it!!
