CEVICHE: three delicious recipes by Anjali

Ceviche is a traditional dish from several Latin American countries consisting of fish, seafood or both, marinated in citrus dressings. We find different versions in Chile, Peru, Colombia, Mexico etc. Our ceviche will be, of course, vegetarian. Here go three delicious recipes!!

Mango Ceviche:
Ingredients: sweet ripe mango, finely chopped coriander, mint and fresh chilies, raw and crispy cauliflower, radish, some tomato, cucumber, carrots cut into julienne, sushi alga cut into strips, lemon juice, olive oil and salt to taste.
Chop mangoes, cauliflower, radish, tomato and cucumber and combine them with carrots in julienne and finely chopped fresh chilies, cilantro and mint. Mix all the ingredients and let them marinate for several hours in the lemon juice, olive oil and salt. Add the seaweed just before serving and enjoy it along with corn toasts or crackers.

Carrot ceviche with green and black olives (my favorite!)
Ingredients: carrot in thin slices, some cabbage; dates, mint and chilies finely chopped, green and black olives slices. Turnip sprouts, it can also be alfalfa or broccoli sprouts. Seaweed for sushi cut into strips, lemon juice, olive oil and salt to taste.

Mix all the ingredients and let them marinate for several hours in the lemon juice, olive oil and salt. Add the seaweed just before serving and enjoy it along with corn toasts or crackers.

Coconut ceviche:
Ingredients: fresh tender coconut in pieces or striped, chopped cucumber and tomato (without seeds); chili (the best ones are serrano, habanero or chipotle) parsley or cilantro finely chopped. Lemon juice, olive oil and salt to taste. Optional: sushi seaweed cut into strips. 
Mix all the ingredients and let them marinate for several hours in the lemon juice, olive oil, and salt. Add the seaweed just before serving and enjoy it along with corn toasts or crackers.
